Warm mushroom and roasted beet salad

-1 mushroom medley (sauteed with garlic and salt and fresh basil)
-5-6 medium sized beets roasted (remove leaves and saute along with mushrooms or save for another recipe)
-lettuce, green onions, carrots, cucumber
- your choice of seeds or roasted nuts like pecans
For the dressing: 1/4 cup olive oil, 1/4 cup red wine vinegar, 1 tsp Dijon mustard, 1 tsp salt
