What you'll need:
1/2lb mushroom medley (each mushroom offers a unique flavour and texture and come together great in this risotto!)
2 cups arborio rice
6-8 cups broth of your choice (we used mushroom broth!)
2 tbsp oil of choice
2 cloves garlic
2 tsp fresh parsley
1/4 cup cream or sharp cheese like cheddar or parmesan
Slice up your shrooms and add to preheated and oiled pan. Cook until golden brown. Add rice and coat in oil, toast for 1-2 minutes. Gradually add the broth, starting with 1/2 cup stirring constantly, once all the broth has been absorbed by the rice, then add by 1/2 cup increments, all the while stirring. Finish with your optional toppings!
