Local pork chops with mushroom medley gravy, steamed fiddleheads with lemon, and mashed potatoes with more mushroom medley gravy and chives!!
Mushroom gravy/sauce:
1 tbsp butter or oil of your choice
1/2 lb Mushroom medley
2 cloves garlic
1 small onion (optional)
1 cup heavy cream or 10%(will be runnier) or coconut cream or cashew milk for vegan sub.
2 tbsp tamari or 1tbsp soy sauce
Herb of your choice (ex. Basil, oregano, chives, rosemary)
Directions: Finely chop mushrooms, onion, and garlic. Saute in a pre- warmed sauce pan until lightly browned and mushrooms have reduced to about half their size. Add soy sauce to lift any good stuff off the pan. Add cream and stir constantly for 2-3 minutes. In the last minute add your herbs! That's it! Serve over meat, mashed potatoes. Sooo good!
